That is a great question! There are many reasons, here are some of them: 1. Using code to make art is a constraint, and to make art you need constraints 2. This shows people what the Blender Python API can do 3. From these scripts, you can find tools and techniques to make add-ons for blender 4. Learning Python via a visual medium is fun
