Preheat oven to 425°F (220°C). Toss whole carrots with olive oil, cumin, smoked paprika, salt, and pepper. Arrange in a single layer on a parchment-lined baking sheet. Roast 25–30 minutes, turning once, until caramelized, tender, and slightly charred at the edges. Make the hot honey. While carrots roast, gently warm honey and red pepper flakes in a small saucepan over low heat for 3–4 minutes. Remove from heat, stir in vinegar, and let infuse. Strain if desired or leave flakes in for extra heat. Whip the ricotta. In a food processor or bowl, blend ricotta, olive oil, lemon juice, salt, and pepper until silky and light, about 1 minute. (A whisk works too — just beat vigorously until fluffy.) Assemble. Spread whipped ricotta across a large serving platter. Nestle warm roasted carrots on top. Dollop extra ricotta along the carrots if desired. Finish. Drizzle generously with hot honey. Scatter fresh herbs and flaky sea salt over everything. Serve warm or at room temperature. Tips Don't peel the carrots — the skin adds texture and roasts beautifully. Whip ricotta while carrots rest — warm carrots + room-temp ricotta is the ideal combo. Adjust the heat — start with less pepper flake and taste; you can always add more. Variations Add toasted pistachios or walnuts for crunch. Swap ricotta for whipped goat cheese or labneh. Use rainbow carrots for a stunning color presentation.
Chicken Gyros with Creamy Tzatziki Wraps Servings: 4 Prep Time: 20 minutes Cook Time: 15 minutes Total Time: 35 minutes (plus marinating time) Ingredients For the Chicken Marinade: 1.5 lbs (680g) chicken thighs, boneless and skinless 3 tbsp olive oil 3 cloves garlic, minced 2 tsp smoked paprika 1 tsp ground cumin 1 tsp dried oregano 1 tsp onion powder ½ tsp cayenne pepper 1 tsp salt ½ tsp black pepper 2 tbsp lemon juice For the Creamy Tzatziki: 1 cup Greek yogurt ½ cucumber, grated and squeezed dry 2 cloves garlic, minced 1 tbsp fresh dill, chopped 1 tbsp fresh lemon juice 1 tbsp olive oil ¼ tsp salt For the Wraps: 4 large pita breads or flatbreads 1 cup shredded lettuce 1 cup cherry tomatoes, diced ½ red onion, thinly sliced ½ cup crumbled feta cheese Olive oil, for brushing Instructions Marinate the chicken. Whisk olive oil, garlic, paprika, cumin, oregano, onion powder, cayenne, salt, pepper, and lemon juice together. Add chicken thighs and toss to coat. Marinate at least 30 minutes, or up to overnight in the fridge. Make the tzatziki. Combine Greek yogurt, squeezed cucumber, garlic, dill, lemon juice, olive oil, and salt. Stir well and refrigerate until ready to use. (The longer it sits, the better the flavor.) Cook the chicken. Heat a grill pan or skillet over medium-high heat. Cook marinated chicken 6–7 minutes per side until deeply charred and cooked through (internal temp 165°F / 74°C). Let rest 5 minutes, then slice into strips. Warm the pitas. Lightly brush pitas with olive oil. Toast in a dry skillet or grill pan 1 minute per side until warm and slightly charred. Assemble the gyros. Spread a generous layer of tzatziki on each pita. Layer lettuce, sliced chicken, tomatoes, red onion, and crumbled feta. Drizzle with extra tzatziki and fold or wrap. Serve immediately while warm and crisp. Tips Squeeze the cucumber bone-dry for tzatziki that stays thick and creamy, not watery. Chicken thighs over breasts — they stay juicier and char better. Rest the chicken before slicing or the juices run everywhere. Variations Add sliced pepperoncini or banana peppers for extra tang. Swap chicken for lamb or a mix of both for traditional flavor. Make it a bowl — skip the pita and serve over rice with all the toppings.
